RECIPE
1. Arrange flour into a mount on work surface. Make a well in the center. Fill the well with 3 eggs and use a fork to break up the eggs, then slowly work them into the flour. Knead dough with hands for 10-12 minutes, adding water or flour as needed until it is elastic and smooth.
2. Roll out dough with a rolling pin or pasta machine to thin sheets (about 1-2 mm), then cut into rectangles. Use a pasta chitarra, pasta cutters, knife, or other pasta tool to shape into desired pasta shape. Swirl noodles into nests or hand on a drying rack while water boils.
3. Boil a large pot of salted water, then gently place the pasta inside. Cook until pasta rises to the top, approximately 2-3 minutes. Serve immediately with your favorite sauce.
